This wonderful Choklat Imperial Stout by Southern Tier Brewing Company is one of my favorite beers of all time. After letting it cool and age a bit in my cellar, set up shop on the dining room table, and popped the bottle top. Then I let this fine brew fill my favorite beer goblet. The body of the beer was motor oil black, with a slight amber tint from the light. The tan head was about two fingers thick, and lasted for about two minutes. The chocolate lacing was there too. I brought the goblet up to my nose for a smell of the fine aroma, and the first thing I detected was Hershey's chocolate syrup, and it was powerful. Then I detected undertones of malts, oats, peanuts, and alcohol. It had to be the best smelling beer on the planet, beautiful in every way. Not for the taste test, and bam, simply amazing. Like drinking pure chocolate semi sweet dark chocolate liquor, with a touch of carbonation. It was creamy, silky, thick, yet light on the mouth, and like angels breath down the pipes. Simply amazing. Once the initial chocolate flavor subsided, I tasted a flurry of things such as caramel, roasted oats, peanuts, vanilla beans, it about blew my mind. Overall thoughts, this is the one folks, the chocolate beer of chocolate beers. It as close to perfection as a beer can get, and it's worth every penny spent. You must get your hands on this beer, if you really want a true representation of what the gods intended chocolate beer to taste like. I tip my beer goblet to the folks at Southern Tier Brewing Company, a fine job people, much respect to you from an avid beer connoisseur.
